How did you try to change the line spacing? If it was directly on some 
selected text, then it will affect that text only. If you want all paragraphs 
to have double spacing then you will need to change the Default style. Hit 
F11 (or Format -> Styles and Formatting) and right click on Default, 
selecting Modify. Then under the Indents and Spacing tab you can change the 
spacing for the Default paragraph style, and it will also affect all styles 
derived from Default.

If you want to make it the default for all your new documents, then you will 
have to create a default template with the settings you want.
