Okay -- now I've got it straight.

Click "File", choose "New", and go to "Labels"

The Labels dialog appears.

Click the "Format" tab.

Adjust the values to fit your labels.

Now click "Save"

Now you have the "Save Label Format" dialog.

Notice that you can actually enter text in the "Brand" field. If you now
save the label, you will have created a new Brand category.

Either way, there's no intuitive way to remove them, as far as I can
see. Intuitive or not, I want to know how to remove label formats I
don't want anymore, because they just cause confusion.
