You can uncheck "while typing" from /Format/AutoFormat. I agree that
"toggle" functions are bad: better to say "on" and "off" or similar or
have separate buttons.
I also uncheck all the AutoCorrection features because my technical
material doesn't conform the the rules and gets mashed.

The auto format tool is difficult at best to understand. There is no

If you really want to create an alternative to MSOffice, learn from them:
install a function where anything autoformatted, when hovered over

mouse, shows an option to reverse the formatting. And install a clear
option
to turn autoformat off (hint: it should say "on" and "off").
