The templates from OOExtras may provide some ideas for assignments. E.g.
Apart from the usual letters and memos with letter heads etc, there are
timesheets, invoices, newsletters, brochures, calendars etc. Projects
that they can then share and use for other aspects of their class or
personal/business work would be great.
