Use styles: Open the Styles and Formating window using the F11 key.
Right click Heading 1 in the Paragraphs styles. Select Modify. Then make
your changes. All paragraphs using the Heading 1 style will be updated at
the same time.
For more information on styles see the User's Guides at
http://documentation.openoffice.org. There are even a couple of chapters
on styles written by the OOo Authors that would be helpful.
