There is lots of documentation from here: http://documentation.openoffice.org/manuals/index.html including a getting started guide. To turn off numbering, try Tools -> Autocorrect and uncheck Apply numbering But you still need to know about styles, so Writer knows how to justify a paragraph when you edit it, etc. You can define your own tabs by modifying the paragraph style, and define how to indent (or define the margin width) on either the first line, or the whole of a paragraph; and lots of other options.
