While the CDs may be rewritable the most common File System (iso9660) used on CDs is static. That is once created the file system should remain unchanged. You would normally need to copy the entire CD to a tree on your hard disk, make the changes there, and then rewrite the entire CD with a new file system. Or you maybe able to write it to a new "session" on the same CD without erasing or overwriting the original session. It is possible to create the CD initially with a dynamic file system but be cautious. Many dynamic files systems rewrite certain parts every time they are mounted or dismounted so you can rapidly exceed the rewrite limit for the CD which definitely finite.
