I tried on my PC, opened up a Writer-doc and typed (c), and voila... ©
came up by it self...
I have OOo 2.0.3 (Swedish), Win XP Home-edition.
try, (c) in Writer, maybe it is in your auto-correct list already.

When you found it, you could include it in the autocorrection list, so
that (for example) something like (c) is automatically replaced by the ©.
