No, you don't make it two columns. You make your page size the same as one side of the booklet, i.e., 5.5 x 8.5. If your pages need headers and footers to put titles and page numbers, for example, you can make the pages formats to be mirrored by specifying that on the Format->Page dialog. Also, you will want to use the built-in page styles of Left Page and Right Page, and make sure that each of these says that the following page is the other style. I'm sure our documentation project has information on this but I have never had to use it, so I could not tell you exactly where to find it. Try http://documentation.openoffice.org to start.
