Most if not all programs should be removed using the control panel tool
"add/remove programs".

Microsoft do not release information about the internal storage
method of the file format .DOC. Consequently OO.o's filter that imports
.DOC files is not perfect. Having said that each version of OO.o is
better than the last, the most recent version of OO.o is 2.0.3. What
will geerally not work at all is VB macros.

A second reason that a file may look different is that each program can
present information differently. This is a decision made by programmers
and the teams above that level. Though very similar in presentation Word
and OO.o do not present information identically.

How have you gone about solving them?
Have you read any manuals about the differences between Word and OO.o?

Writing an OO.o document can require you unlearn some bad habits that
Word gets you into. Taking the time to do so can increase your
productivity. As a for instance; most Word users do not seperate content
from design as they are authoring a document.

Removing any program should not remove any files stored in My Documents
or on your backup device... EVER.

No Word files have been "converted without your permission" at all.
Despite your frustration i can advise you that this statement is
incorrect on two counts:

Each file type is assigned a default program, which opens the file, by
Microsoft Windows (not OO.o). Thus web pages will usually open by
default in Internet Explorer. Pictures will open in a picture viewing
program or editor, whichever is set as the default. Thus you may find
.JPG images open in Paint, .GIF images open in Internet Explorer, and
.SVG images in Inkscape by default. Microsoft Windows, the Operating
System, not any given program is responsible for deciding which program
opens which file type.

Secondly during the install process you probably gave permission for all
Word, Excel, and Powerpoint file to open "By Default" in OO.o. It is a
simple matter to reset this Windows setting. I beleive once you have
done so, your frustrations will be greatly reduced and you will see no
need to remove OO.o at all.

___To reset the default program___
DISCLAIMER - The following is from memory and may not be 100% accurate.
STEP 1
IF you have Windows XP simply right click on any .DOC file
  OR
For Windows98 or WindowsME hold shift and right click on any .DOC file
STEP 2
Select "Open With..." from the pop up menu. If the list is only 3 or 4
entries long you probably moved the mouse while right clicking.
STEP 3
Select the program you would like to open the file with from the list,
in your case Microsoft Word.
STEP 4
Look for a checkbox in the bottom left corner of the dialogue box that
reads something like "Use this program to open all files of this type"
and check it (click in it).
STEP 5
Click OK

Certainly...
Do not uninstall OO.o immediately for several reasons. 

1. If you thought going from Microsoft Word to OO.o was a stretch. Wait
until you see the new Microsoft Word version12 to be released soonish.
There are far more presentational similarities between OO.o and your
exististing Word than between Word 2003 and Word 12. OpenOffice and Word
can happily coexist side by side on your computer.

2. If you saved any files at all using OO.o's native file type then you
will need OO.o to read these files and possibly to convert them.

3. Microsoft Office does not have any equivalent to the "Draw" part of
OO.o

4. Many governments, states and cities are beginning to specify ODF
formatted files because you are not tied into a single
Operating System or an expensive Office Suite available only from one
supplier. Over the past year especially much press has been given to the
very public, at times very caustic debate in the Commonwealth of
Massachusetts which will require all public documents be in ODF format.

5. Oo.o is free

6. Consider the assistance you get for each. Would Microsoft give you an
hour to help you understand these issues as i and others on this mailing
list can and will do for free.
