There are two completely different requirements people have of Insert->Special
Character. One is to insert truly different characters (like math symbols)
where it is essential to keep the font as defined for the character as it may
be available only on a few fonts. And the other is to add diacritics, as you
are doing. Font information is held with the character, and the paragraph
font defines the default for the paragraph.

As you have discovered, Insert->Spec adds the font info to the inserted
character, and so is separated from the paragraph default. To merge them
again, you can highlight the whole paragraph (4 quick clicks with cursor in
the para) and set the font. Then you can change the para style font and it
will apply to them all again.

Personally, I always add diacritics directly from the keyboard where it will
pick up the font info from the current style. I insert math symbols from the
Insert->Spec menu.
