For the second step select the appropriate chart type and make sure that only data in columns is checked. Click the next button. Type in whatever you want for a Chart Label and click on the x axis label and type in whatever you want to label the x-axis. Click on create. This created a single line chart for this data in OpenOffice.org 2.0.3 on my Mac.
