Fedora distributes an official Fedora set of OOo packages that are updated and supported by Fedora. These are what I've been using, as I want a stable and supported installation of OOo that integrates well with the rest of the distro.
You should be aware, however, that the Fedora packages are NOT the latest stable OOo release. The current Fedora packages are still based on OOo 2.0.2. This is because RedHat has determined that it cannot distribute OOo as released, due to "intellectual property" issues.
One of those issues is Java. Fedora is working hard to develop a free replacement for Java, and OOo requires some changes to work with that. Also, there some OOo features which are removed by Fedora from the OOo.org releases, as they feel the features may be subject to software patent claims, and do not wish to risk being sued over it.
Even so, I am happy enough with the Fedora packages (I'm on FC5), and you can install the packages from openoffice.org instead, or alongside, of the Fedora packages. I find the OOo.org packages often have some glitch; e.g., the Base component of the 2.0.3 download doesn't work at all for me (but it's fine in the 2.0.4rc).
Maintaining the various settings that I have made over the years that are in my home folder.
The newer versions will offer to import your settings when you first start up.
