Floyd, your request should be easy enough.
In your Writer document go to Tools>Options>OpenOffice.org
Writer>Basic Fonts (Western), and there select Arial for Default
(you'll see it at the top). Make sure the 'Current document only'
option is left unchecked at the bottom. Click OK, and you're done.
