To change the default font, create a new document in which you change it to the font you like best. Then save the document on you disk in the folder C:\Documents and Settings\<username>\Application Data\Openoffice.org2\user\template. Don't forget to change the filetype to '.ott' Close the file you just created, but not OOo. After that go to File/Template/Management (I use the dutch version, so I'm not sure if this is the right name for this option but it's the first one). Under 'my templates' in the left window you should see your document. Now click on the second button on the right and click on 'Set as defaulttemplate'.

The autocorrection issue has been explained to you by other users I think.

First of all, thank you for offering a superb product, that functions
identically to Word as far as I can tell, free! It is truly appreciated.
I'm wondering if I can change the default font, when a new document first
opens. I HATE Times New Roman!
Also, sometimes when I begin to type a word, the full word is displayed, with the untyped part of it highlighted. How do I get it to appear? I've tried the arrow key, enter, & tab; all of them make it disappear. Thank you for your help.
