(Assuming Windows) Save file of required type somewhere on your system and navigate there with Explorer. Right-clic, Open Wth, Choose Program, set "Always use ..." and double-click "OpenOffice.org 2.0". This will set OO to open this type of file everywhere you can double-click it, not just in e-mail.
