Hold down the Control key while clicking on the sheets you want
to deselect.
This information came from OOo's help. Use the F1 key to open
help while you have a Calc sheet open. Click the Index tab if it is
not already selected. Enter "Selecting;multiple sheets" without the
quotation marks in the Search box. Click the Display button at the
bottom. "Copying to Multiple Sheets" appears on the right. At the
bottom of it is two links. Click the first one, "Applying multiple
sheets." The third subtopic is "Undoing a Selection." This subtopic
has the information you wanted.
