Unfortunately, "Entering dates" is not a NUMBER FORMATS choice.
I can correctly enter Jewish (or any other calendar type that OOo
supports) dates in the spreadsheet --- as a number format. [At least,
they all behave as if they were a number format, and follow the same
set of rules of arithmetic.
What I need help with, is converting those dates to a Gregorian calender.

So, you have a system with a Jewish calendar and .... Who knows how
that works? East is East and West is West. Is there a language pack
that changes the way OpenOffice calculates and reads dates?
As far as I can see, OpenOffice uses the western standard calendar.
There are 365 days in a year and so on. The "null" date can be chosen
between three options but that's it.
Compiling any calendar requires formulas. The Hebrew language pack and
/ or the Hebrew version (if there is one) may have additional functions.
After looking at Wikipedia on the subject, I believe it would be a
profligate waste of resources to try to accomodate the Hebrew calendar.
There are, for example, several variations in the length of a year:
