The tabs allow you to create multiple "depths" of sheets that can be links to form complex relationships. A simple example might be a monthly sales ledger, with each tab representing a month, and allowing a cumulative sheet to represent a year. These are all kept in the same file.

Opening a second spreadsheet file does open a separate instance of Calc.
