I suppose if there exists an Italian version of OpenOffice, there should
exist an Italian language pack too. No ? Unfortunately, I was unable to
find (and to remember) the web location of the language packs (all I
know is that is not always easy to guess what is the language you
download... I downloaded Norwegian somewhat erroneously...

language in italian but in the options window I can choose only
beetween default (english) and english (usa). How (and were!) can I
find the language pack of italian? How do I install it?

Do you really mean version *1.1.0*? The latest version is 2.1.
There are two things: dictionaries and language packs. The dictionary
will let you check the spelling of your documents in Italian. The
language pack will change the user interface (all the menus, help text
etc.) Typically people use one language pack but may have several
dictionaries for multi-lingual documents.
The Italian dictionary can be installed by using the Dictionary
Wizard. Go to File>Wizards>Install New Dictionaries and follow the
instructions. Make sure the Quickstarter is *not* running before you
install the dictionary.
I am not sure if there is an Italian language pack. Please look at
http://it.openoffice.org/ which you will be able to understand but
which, due to my poor Italian, I cannot.
If there is a language pack then it probably includes the dictionary
but I know that the dictionary is available separately via the Wizard.
