Like many things in OOo this almost undoubtedly depends on styles. I suggest you make a new style (perhaps based on default, or "Text Body") and set the language from the "Font" tab to be Spanish. It depends whether you need the whole paragraph to be Spanish or just a few words. If the latter you would need to base it on a "character" style. Language is a characteristic of the text and you need to set that so the spellcheck can work on it.
