Thanks to all for the responses. I was hoping it was a simple matter.
I've tried it out and it works just fine.
Now I can delete Word and Excel. :)

other applications, use File > New after opening OOo to get the menu
listing them. Or, you can click the New icon at the left end of the
Standard toolbar (directly below the word File).

If I have an existing Excel file, I can "open with" and select
OpenOffice, and Calc will start, but I don't see how to start a new
spreadsheet without first finding an existing Excel file, and I'm
sure there's a better way than that.
Finally, and slightly off-topic, why are almost all of my menu
options (screen menu, not individual app window menus) grey, and
how can I make them active?
