If you install one or more English dictionaries (there are at least two: UK 
and US which are very different) and tell OpenOffice to use one of them as 
the default language then it will spell check in that language. The same is 
true of French or Italian or ... It has nothing to do with the language of 
the OS. You can create a "template" for each language and select the 
appropriate one for each new document.

You can also write multi-lingual documents by setting up "styles" for each 
language. OpenOffice will spellcheck each paragraph in its own language. of 
course, you need the relevant dictionaries installed
