Which version of OOo are you using? In version if you click on Format >
Bullets and numbering you get 6 tabs:
- Bullets (8 predefined options)
- numbering type (8 predefined options)
- Outline (8 predefined options)
- Graphichs (40+ predefined options)
and finally two tabs (Position and Options) that allow a full customization
of the bullet and numbering style as well as the placement and paragraph
attributes of the bulleted or numbered list.


To change the bullet type for example, go to options, click on level 1,
select bullet in the first drop down list, then click on the button with
three dots and select the bullet type you want (switch to the OpenOffice
font type for a wide choice of bullet points). Adjust then the indentation
and spacing to text in the position tab and click Ok.
If you intend to re-use the same bullet often, you may want to consider to
create a style for it.
