http://documentation.openoffice.org/manuals/oooauthors2/ has complete Guides as well as individual chapters that can be downloaded. The exceptions are the Calc and Impress Guides which if you look at the chapter numbers is not completely writen yet. The entire Guides are listed just above Chapter 1 where they are available. There is also a complete User Guide available at http://documentation.openoffice.org/manuals/.
