You are absolutely right and I've worked out why it wasn't working... and it's even in the Porting FAQ so apologies...

Andrew:
Go to X11, at the menu bar at the top click X11, and then click preferences (or try Cmd+, ). This should give you the X11 preferences. Untick the box that says "Enable Keyboard shortcuts under X11"

Cmd+C will never work under X11 in Mac. You can use ctrl+c to the
same effect (and the ctrl button is only one button away from Cmd
after all).
Failing that try NeoOffice from www.neooffice.org which some people
have claimed run slowly, though it has always been fine for me. This
will use the standard mac shortcuts.

Because you are running under X11 you have to use X11 key
commands --
control-v and control c

the "working" command c is really the copy fuction from Apple's
launcher interface for X11

neooffice will give you a much more "mac" interface including
standard copy & paste
