I can't remove double spaces from lines.
I'm not too sure if you mean two spaces (two space bar entries) or double line spacing.
1/ for double spaces (eg, two consecutive spacebar entries), it is as simple as doing a find and replace (ctrl + f). Enter 'search for ' as two space bar entries, and in the replace space put a single space bar entry. Replace all button will then go through and replace all instances of two space bar entries. 2/ for double line spacing, it is best to check what you have set the style to be. If you bring up the style window (f11), then modify the stylt that you've chosen to reflect what you want. Without more information it is harder to be more descriptive. Reply to the list with more details if this does not solve the problem.
When I finish with this, how can I delete this program off my computer?
Without details of the OS your using I'm going to assume Windows. Simply uninstall OOo the same way you would with all other software. Add/remove programs then seleect OOo to uninstall.
I am in publishing and the last damn thing I need is to not be able to use a program.
The fact that your in publishing and you inability to use the program are two different things. Have you read the user guide (documentation.openoffice.org), have you asked any other questions on the list? I'm sure all your answers can be answered if asked.
