This is a common problem with OOo - it doesn't create and/or replace any icons during install. Delete the icons on the desktop, then Start|All Programs|OpenOffice & right click the individual program icon to create a new shortcut. I'm not running XP so the last is by memory, but should give you enough information to fix the problem.
