You can do simple organization charts (see the attachment) using the FORMAT CELLS and BORDERS tab.

I didn't know Excel could do drawings. In OpenOffice I'd use "Draw". Or possibly Impress (the OpenOffice competitor to Powerpoint).

For the shortcut, please see the Help under Customizing the Keyboard. There is a Connector tool in Draw that can be allocated to a key. You still need to choose the two objects to be connected. You'd have to write a macro (beyond my talents) to choose "the last two objects I drew" if that's what you want.
