Use Tools > Options > Linguistic settings. But the problem is that with
OpenOffice, once you have selected the "new" language, you have to stop
OpenOffice and restart it before the new language appears.

I like to write in different languages. I don't see a "define language" option
in the tools menu for spell check or languages like Microsoft Word has.
