The language of the User Interface can be changed at ">Tools >Options
Languages".
You will need to install the appropriate language packs. If all you want to do is change the language that you create documents in, then you need to use styles. You need to create a set of styles for each language that you use. If you want the spell checker to go thru the document you created, you also need to install the appropriate dictionaries. ">Files >Wizards
Install New Dictionaries" and follow the directions. [Pay attention
to the warning about installing more dictionaries than you use. That will slow OOo down, and increase the memory footprint. (And if you check the "spell check all languages"option, it will result in incorrect words being deemed to be correctly spelt.)
