Even though you may see "English - UK" in the language list, you might
need to install the appropriate dictionary. Try the menu entry "File ->
Wizards -> Install new dictionaries", follow the wizard through and
allow the dictionary update (i.e.. uncheck/untick "no update").

If you are going to use OOo for creating anything more than the
occasional note I would recommend you read up on styles. Check out the
guides at: http://documentation.openoffice.org/manuals
