Spell checking:
     You will have to first set you language so that it matches the 
language of the words you are writing. To set the Default language, 
go to Tools > Options > Language settings > Languages. My guess is 
that under  Default language for documents you have English(USA) with 
a spelling icon in front of it (abc with a green tick). You want to 
change that to English(Canada) if Canadian English is what you need.
      If English(Canada) or whatever language you choose does not have 
this spelling icon in front of it, you will have to download the 
dictionary from the web. File > Wizards > Install new dictionaries  
will do this for you.
     Once you have selected the language you want and the spelling 
icon in front of it, close OpenOffice.org. Also close the 
Quickstarter in the System tray (next to the computer clock). The 
Quickstarter is a blue and gray background with the silhouettes of 
three birds on it. Then reopen OOo.
     The icon in the Standard toolbar for Automatic Spellchecking is 
an ABC with a wavy red line below it. This icon toggles spellchecking 
on and off. (I leave it on all of the time.) With this icon on, 
misspelled words should be marked as soon as you use the space bar 
after them. To then correct the misspellings, use the F7 key. A 
window opens allowing you to choose a different spelling, change the 
spelling yourself, or add the word to your dictionary if it is 
correct.

Highlighting:
     If you are manually adding highlighting, there are only two ways 
to change that. First, select the words with the highlighting with 
the cursor, and then click the arrow on the right edge of the 
highlighting icon. When the colour pallette opens, click No Fill. 
This should remove the highlighting. Second, select the words with 
the highlighting. Then use Format > Default Formatting.
