If you want to uninstall OOo 2.1 drag the file from the
Applications folder to the trash. Find the Application Support
directory for OOo 2.1 and drag it to the trash. Empty the trash.
In other words, this is the standard method of uninstalling an
application on a Mac.

I understood from the FAQ that in order to save prefs from one version to
another, 2.1 could be renamed, copied or whatever to 2.2 in the Application
Support.
IOW how to avoid starting customisation from zero.
