Alain:

You can drag the OpenOffice.org 2.1 item to the Trash and then
empty the Trash.  This will remove the program from your
system.  If you look in the Library and then the Application
Support folder, you will also find an OpenOffice.org 2.1 folder
that you MIGHT want to remove.  The reason that I make this 
distinction is that the default folder for saving documents
and backups is in a sub-folder called work that will be removed
if you delete this folder.  Please check the settings of your 
document paths by looking at the Options dialog which you 
can access through the tools menu.  Document and backup paths
can be examined by selecting OpenOffice.org and then Paths in
the dialog box.  Clicking on an item will open another box where
you can type in a new location for those files.  I DO NOT recommend
creating backup copies of documents in the Documents folder but
use this folder for your saved documents.
