Go to Tools > Options > Language Settings > Languages. There set
the default language to what you want. If the language you want does
not have and abc and check mark in front of it, see next paragraph.
Click OK. Then close OpenOffice.org. If you are using windows, close
the quickstarter in the System tray as well (icon of three birds
flying on a background of blue and gray). When you restart OOo, the
default language will be what you selected.
To download additional dictionaries, File > Wizards > Install new
dictionaries. Follow the directions.
