Take a look at the Mac porting pages of OpenOffice.org:
http://porting.openoffice.org/mac/
You'll have to install the X11 windowing system (if you don't ahve it
already). Follow the instructions of the How-To pdf closely.
The download starts here:

There are different versions of X11 for Panther (Mac OS X 10.3.x) and
Tiger (10.4.x)
There are different versions of OOo for Mac Intels and Mac PPCs

A native (Aqua) version of OOo is in the making... available probably
later this year.
In the mean time, OOo under X11 does a good job.
