First off, more explanation of the error would be nice.
To uninstall anything on the is done by drag & drop into the trashbin.

Indeed, just drag the OOo 2.1 and drop it in the Trash.
Additionally, you might also D&D OOo's 2.1 Application Support in the Trash:
You'll find this folder in Library > Application Support > OOo 2.1
On a Mac, a new version just installs itself next to the older one (I
have 2.2 next to 2.1).
OOo 2.1 will be the last version that runs on your Panther (10.3.x).
So in your case, cleaning up before reinstalling 2.1 seems the right choice.
