I would definitely try to test the latest version of OOo with your
documents/fonts. There has been some work on improving consistency
across platforms.
Personally, I would be reluctant to standardize on a Type1 font,
especially the free ones. My impression is that they have more problems
and less support (e.g. bug fixes) on both platforms.
Maybe you can get TTF files inexpensively.
My subjective impression is that you are fighting a nasty battle.
Windows and Linux use completely different font systems, display and
renderering software, and text is a very complicated problem. The OOo
people are working to make documents work perfectly across platforms but
it is a difficult problem that is not solved yet and may not be solved
completely for some time.
