In my version of Calc (I'm still on 2.0), hyperlinks appear by default in blue on a grey background. Is that what you mean, or something different? The grey background is just an indication that the contents of the cell are a hyperlink, and is not the genuine background colour. You can see that this is so either by expanding the cell so that it is bigger than necessary to contain the hyperlink, when you can see the true background colour around it in the cell, or else by using Page Preview, which will also show the true colours.

Do you want these to remain as hyperlinks? If not, just use right-click and then select Default in the context menu to remove the hyperlink. Then you can format the cell in the normal ways.

But anyway, I think I have found the answer to your question. In the case of normal (non-hyperlink) text, you can change the font colour or background colour simply by selecting the relevant cell. But, as you have discovered, this does not appear to work for hyperlinks. It does work for the background colour, in fact, but you may not be able to see the effect as it is hidden by the hyperlink's automatic grey shading, as mentioned above. To change the font colour, select the cell but then *also select the relevant text in the copy that appears in the input line at the top of the sheet*. Now you can change the font colour effectively.
