You have discovered one of the downsides of OpenOffice.org:
Impress only allows you to play sound as part of a transition between
two slides. To get a continuous sound, you need a second application
playing the sound while you run Impress.
As far as the "Change All" command, I do not personally use a
Mac. (I use Linux.) However, there are others on this mailing list
which use Macs. One of them should be able to answer this problem.
