Your English is much better than the German I learnt 45 years ago! You may prefer to use one of the links here:

Normally if it is just a "one-off" formatting, you can highlight the text with your mouse, then if you have the "Text-object" toolbar showing you can click on the I and B icons (of necessity I am referring to the English setup). Or you can use Ctrl-I Ctrl-B from the keyboard.

If you want to do this more regularly, you need to learn about using styles. See Chapter 6 in the Writer Guide at http://documentation.openoffice.org/manuals/index.html
