I am a NEW Mac user, and also a NEW OpenOffice user. I found most of the
items, but couldn't get it together.

Now, I have entered the format I always want to use for my dates. I checked
the green check, and I assume that the program will now always remember the
date format?

 Open the View menu. Near the middle of this menu is the Field Name
selection. It probably had a check in front of it. If it does, click it to
remove the check mark. Now your date should appear. If it is not in the
correct format, right click the date and select Fields from the menu that
pops up. On the right side of the window which opens select the format you
want to use. If the one you want is not in this list, click Additional
formats. You can even enter your own format. For example, DD MMMM YYYY

will give you the day first, the month spelled out completely, and then
the year.
