I'd recommend that you file a bug with Ubuntu:
https://bugs.launchpad.net/ubuntu/+source/openoffice.org/
However, I suspect that you probably need to have another look at
File|Save As and look under:
File type: (select what filter/format you want to save the document as)
You can turn off 'Automatic file name extension' under the same dialog
menu and name the extension to whatever you want.

version running, and it seems to have cut out the Ubuntu version, so I'm
