Unless you have very specific needs (such as working with QuickTime files in Impress) and until he OpenOffice releases an Aqua version of their suite for Mac OS X, I'd recommend NeoOffice ( http://www.neooffice.org/neojava/en/index.php ) . It uses native Mac fonts, is fully integrated with Mac GUI and menu bar, uses Mac- style shortcuts (e.g. command+V rather than Control+V to paste) and does not require X11. It's also integrated with Spotlight, so you can search text all supported file formats, including ODF, directly in Spotlight. This is controversial as two NeoOffice developers who ported OpenOffice to the Mac using Java for some GUI integration don't see eye to eye with the Sun establishment.

On my (Intel) MacBook with 1GB RAM NeoOffice is fairly snappy (though sometimes fails to respond for a few seconds after switching from another application) and faithfully opens, edits and saves all Word, Excel and PowerPoint files MS Office users send my way.
