You can put the cell merge icon on the visible tool bar. Then, your single click can be a mouse click. TOOLS -> CUSTOMIZE -> TOOLBARS Tab -> Formatting Toolbar -> and check the Merge Cells checkbox. You can add/delete to suit you.

Go to Tools - Customize. Click on the Keyboard tab. Under "Functions" select the category "Format". Under "Function" select "Merge Cells" (there are two
of them for some reason). Assign that to the key of your choice.

Got this figured out too (Save configuration dialog). It was so
obvious that I didn't even think about it. I'm always looking for the
hard way out, I guess.
