When you installed OpenOffice you were asked if you wanted to make it the default program for Word, Excel etc. You must have said yes. To open a document with some other program, *right* click it and choose the relevant program. If, in addition, you also check the "always use this program for this file type" box then your chosen program will become the default for that file type. This is standard Windows behaviour.
