You should relax a little, having a partition auto-mounted is not 
necessarily a security issue. You will find that most if not all 
live CDs will auto-mount partitions. Most of the main-stream 
(especially the ones catering to the Windows users) automate a lot 
of the configuration and that includes the auto-mount of 
partitions. But if that is not acceptable for you then you will be 
stuck with old versions or you will have to build your own OS like 
from here http://www.linuxfromscratch.org/ I am looking into doing 
this. Another option for you might be http://www.knoppix.com/ (home 
based in Germany) it is a live CD spinoff of Debian.

You are able to tell it to use the partitions you want it to use.
