Thanks Brian, i didn't know about the double click thing so that's a help. Would still like to change the default though if anyone knows how.

Sorry, but I don't know any way to change the default format. But it is easy to adjust: just double-click the field to edit it and then double-click "31 December 1999" from the format column. Note that once you have created and formatted one date field in a document you can just as easily copy and paste it elsewhere - keeping your chosen format - as go through the process of inserting and formatting again.
