To do this on the fly for a particular case, select the Options.. button in the Print dialogue box and tick the "Print only selected sheets" box. Selected sheets have white, rather than grey, tabs, of course.

But since you seem to want this as your default, go to Tools | Options... | OpenOffice.org Calc | Print and you will see the same option. If you set it here, use the option in the print dialogue to disable your default in a particular case.
